A meeting of 3 chefs from the Slow Food Alliance of Ecuador to promote the use of non-conventional products.

Achik Zaruma from the “Chumbi” community, Mayté Tapia from the “Amawta Kawsay” convivium and Mauricio Molina from the “Sustainable Foods of the Andean Chocó” community, with the Imaymana Foundation’s Guide to Non-Conventional Plants (PANC) written by Nina Duarte from the “Sustainable Foods of the Andean Chocó” community, will put an emphasis on the use of plants which are not well known and generally discarded. The final objective is to encourage the use of non-conventional products to improve nutrition and avoid food waste.
