In Italy there’s a famous saying: don’t let the farmer know how well the cheese goes with the pears. Today we’ll show you, however, with two typical products from Emilia Romagna, a land rich in vegetables, fruits and gastronomic traditions.
On the one hand we have IGP Romagna pears, which we’ll prepare in two consistencies following recipe 709 of Pellegrino Artusi: a mousse and a compôte. This IGP denomination includes different pair varieties: the Williams, the Kaiser, the Abate… And they’re all well-suited both to the preparation of desserts and savory dishes. On the other hand we have Squacquerone PDO, a famous cow’s milk cheese from Romagna, fresh and creamy, with which we’ll make a quenelle. To go with them, another local product: Bologna PDO potatoes.
