Vin de Rosa of Dignan is a dessert wine made with Istrian Malvasia grapes dried and then pressed: a sweet wine with an aromatic profile reminiscent of roses, hence the name.

To produce Vin de Rosa the loosest, healthiest grape bunches are chosen, placed in trays and then on mats to dry in well-aired spaces for three months. When the grape bunches have lost half their weight, the grapes are pressed together in the strucolo, the grape press. The grape must is collected and placed in demijohns to extract the flavors and aromas of the wine through slow fermentation. After a year, it’s then filtered and bottled, and continues to evolve in the bottle.

This sweet wine appears in historic documents from the middle of the 19th century, where its importance for celebrations in the individual and collective lives of the local people is noted. Traditionally it was only consumed for special occasions such as weddings, baptisms, Christmas and Easter.
