We are a small farm that produces Organic Extra Virgin Olive Oil on the hills of Montalbano in Tuscany.
We use environmentally friendly agronomic practices: instead of herbicides we periodically cut the grass, instead of chemical fertilizers we use crops that release nutrients into the soil for our olive trees, instead of chemical insecticides we use natural insecticides, we try to facilitate biodiversity and the proliferation of antagonistic insects.
In our secular olive grove there are about 11 different varieties of olive trees; from one of these, almost disappeared and that we have recovered, we produce the Arancino Olive Oil.
Arancino Olive Oil is unique in Italy and is a Slow Food Presidium.
From the fruit to the mill through the harvest: 12 months of care to create the best conditions for the fruit to develop healthy and express its best characteristics, then the harvest in October and the release of the new oil from the mill.
Organic Extra Virgin Olive Oil from Arancino Olives – Slow Food Presidium
Oil obtained from the Arancino variety: intense herbaceous fruitiness, hints of almond and artichoke, balsamic notes, bitterness and spicy medium-high.
Organic Extra Virgin Olive Oil from Frantoio Olives
Oil obtained from the Frantoio variety: intense herbaceous fruitiness, hints of almond, artichoke, rocket, spicy and aromatic herbs notes, high bitterness and pungency.
Organic Extra Virgin Olive Oil from Leccino Olives
Oil obtained from the Leccino variety: medium-intense herbaceous fruitiness, hints of almond and artichoke, apple, bitterness and spicy balanced.
La Cavallina Organic Extra Virgin Olive Oil
Oil obtained from a mixture of Tuscan varieties: medium-high herbaceous fruitiness, hints of almond and artichoke, bitterness and spicy medium-high.
