Rinci is an artisanal company, based in the heart of Parco del Conero, Marche, Italy. Francesco, Luca and Alessandro are the young Rinci owners. They propose high-quality gastronomic creations with unique sensory experiences.
We cultivate and produce the Paccasassi, or the wild sea fennel, a spontaneous aromatic plant that grows on the rocks over the sea. In the Conero region, Paccasassi are protected and that is why we decided to cultivate them inside the Conero Natural Regional Park to be able to bring them again on the tables.
They have a unique aromatic iodine taste with citrus notes. They perfectly match with cured meats, anchovies, smoked fishes and fresh dairy products. The perfect panino in Ancona is made of mortadella and paccasassi. They are also excellent with both fish and meat dishes, and to improve salads and first courses.
Our core-business product is Paccasassi in extra virgin olive oil, a preparation which is characteristic and deep rooted in the local culinary tradition. We have decided, however, to renew this tradition with wisdom and originality, creating a line of sauces and pestos, based on the sea fennels, including a vegan mayonnaise, a mustard, a pesto, a red pesto and so much more…
