For over half a century our company has been dealing with wild breeding: sheep and a small group of goats, free to graze on our meadows. In the last 15 years, thanks to the collaboration with the University of Pisa, the feed ration of the flock has been further improved with the integration of flax seeds, rich in polyunsaturated fatty acids and very healthy. That’s why our products can be safely consumed by everyone.
The company transformation of the milk is carried out raw at 35 ° C without any use of external enzymes, to further guarantee the link between the product, the territory of origin and biodiversity; tradition and innovation go hand in hand, which is why being part of the Maremma raw milk Pecorino Presidium was for us a simple formality, despite a deliberately very rigid disciplinary. With the utmost respect for animal welfare, our production is seasonal.
Our cheeses are sold directly on the farm or shipped.
