Founded in June 2010, it has its own laboratory on the hill of Martina Franca in the heart of the Murgia dei Trulli and the enchanting Itria Valley, surrounded by oak woods (fragno) and Mediterranean maquis with a cool and ventilated climate all year round. For the production of its products only high quality raw materials are used. The processing is based on traditional techniques of the art of butchery in the province of Martinique and ensures transparency, quality and consumer protection. The slow maturing systems, integrated by the fresh wooded air, complete the production cycle, guaranteeing the product a particular harmony of flavors and fragrances, which are the elements that distinguish it. Our natural smoking gives a gentle note that does not overwhelm the sweetness of the product but, as in the best combinations, these two characteristics enhance each other reaching harmony. Salumi Martina Franca srl aims at a continuous and constant search for quality by combining “tradition” and “innovation”.

Capocollo di Martina Franca “PRESIDIO SLOW FOOD”.

Muscle of the cervical-dorsal vertebrae, carefully peeled with the presence of more or less accentuated streaks of pinkish white fat.

Coarse sea salt, cooked wine and black pepper stuffed in natural 100% Italian pork casing and lightly smoked with spider’s rind.  This is followed by a slow maturing process that varies from a minimum of 90 days to a maximum of 180 days.

Fillet

Pork undercoast with a slight marbling of pinkish white fat.

Coarse sea salt, cooked wine and black pepper stuffed into 100% Italian natural pork gut and a slight hint of natural smoke with spider’s rind.

Larded fillet

Subcost of pork with adipose fat with or without rind.
