Ours is a very small family-run company that deals with the cultivation of the white bean of Conio.
Our bean takes its name from the country where it is grown, Conio, which is located about 630 m above sea level, in the province of Imperia. The spring water, the type of soil, the exposure, the use of organic fertilizers, give life to this exquisite legume with delicate paste and the very thin peel that is almost not perceived in the mouth.
Our production is very low because the terracing soils do not allow us to use mechanical means, therefore sowing, weeding, harvesting, separating seeds from pods, everything happens almost by hand, with a lot of time and effort. And the manual work also continues in the warehouse with sorting and packing.
In this way, however, quality production is protected, which is still carried out by traditional methods.
For some years our company has been part of the Consortium for the Protection and Enhancement of the White Bean of Badalucco Conio and Pigna, Slow Food Presidium. Therefore, our conio white bean is marketed, to protect the consumer, in cloth bags with the Consortium’s brand and with the Slow Food logo that guarantee the origin and authenticity of the product.
Only these bags with the Consortium logo and Slow Food snail are a Presidium product.
